This Baby Gets All the Attention at Brunch
Puffy, golden, and secretly simple, plus a few versions you will want on repeat.
There is nothing better than waking up to no alarm and the smell of butter and coffee drifting through the air. That has been my reality for the past week. I’ve been in full vacation mode. First, camping. Then straight into a family reunion on Lake Michigan. Slow, tasty breakfasts have been my thing. The kind where you sip coffee in a hoodie and there is zero rush to be anywhere…
This Dutch baby has been in my brunch arsenal for years. When I worked in restaurants, I loved to put it on menus because it never misses. Puffy, golden, custardy in the middle, crisp at the edges. It feels fancy, it tastes indulgent, but it is secretly sooooooooo easy. I promise.
Fun fact: Dutch babies aren’t Dutch at all. The name came from someone mixing up the word “Deutsch,” which means German, and the “baby” part came from serving smaller versions. The name stuck and here we are
My girlfriend is obsessed. I have figured out her game. Sunday workout done, no F1 to watch, and suddenly she is dropping hints about “the baby” for brunch. I always take the bait because it is the perfect little ritual. And we enjoy every bite.
I know these photos make it look restaurant level. And while it is, it is also foolproof. I am walking you through every step so you can get this exact result at home.
The best part is, a Dutch Baby like this is a blank canvas. It goes sweet, per the recipe below, with whipped maple cottage cheese, fresh berries, and mint. OR, you can make it savory with fried eggs and bacon.
Heck, you can do a Mexican-inspired version with refried black beans, avocado slices, pico de gallo, queso fresco, fresh cilantro, and a drizzle of lime, or go smoked salmon style with cream cheese, smoked salmon, thinly sliced red onion, capers, fresh dill, and a squeeze of lemon.
Whatever your heart desires!
