Watermelon in a Salad? Just Trust Me
Salty, sweet, crunchy, and cold...this one’s built for hot days and a chilled beverage of your choice ;)
After my watermelon sorbet post went a little viral (👀 if you missed it, check it out on instagram here and substack here), I figured we’d keep the melon train rolling. But this time, we’re going savory summer lunch vibes. Think juicy watermelon, sweet berries, salty feta, crunchy pistachios, and just enough mint to make it feel like you tried way harder than you did.
Remember: tossing fresh herbs into something is one of my biggest "make it look professional slash chefy" tricks. You’ll look like you know exactly what you’re doing, even if you’re just raiding your fridge.
This salad is one of those "oh, I just threw it together" dishes that somehow gets everyone asking for the recipe. It’s bright, briny, and bougie in the best way. Pair it with a patio and a chilled glass of something and you’re in peak summer mode.

Watermelon, Berry & Feta Summer Salad with pistachios & Mint
Serves 2–3
Ingredients:
1.5 cups chopped watermelon (cold and juicy)
½ cup blueberries
½ cup chopped strawberries
Juice and zest of 1 lime
1/2 cup crumbled feta cheese
2 tbsp chopped roasted pistachios
2 tbsp olive oil
1 tsp Tajín seasoning
2 tbsp chopped fresh mint (plus extra for garnish)
Pinch of flaky salt (optional, depending on your feta)
Instructions:
Toss the fruit: In a large bowl, gently combine the watermelon, blueberries, and strawberries.
Dress it up: Drizzle with olive oil and lime juice, then sprinkle in the lime zest, Tajín, and a pinch of flaky salt if needed.
Add the texture: Fold in crumbled feta, pistachios, and chopped mint. Toss lightly to coat everything without breaking up the fruit.
Finish & serve: Garnish with extra mint and a light dusting of Tajín. Serve chilled, ideally with the watermelon just out of the fridge.
